Here is a delicious, easy and super healthy diet recipe for you to try. We have reduced the carbs by replacing bread with lettuce and making our very own chicken lettuce wraps. Have two or three of these for lunch and you’ll benefit from the protein whilst keeping those calories low!!
You’ll need:
- 1 Chicken Breast
- 1 Tomato
- 1 Cucumber
- Light Hummus
- Paprika Powder
- 1 Iceberg Lettuce
- Vegetable or Chicken Stock
Preparation:
Step 1: To poach the chicken breast- fill a saucepan with cold water, add one tablespoon of stock and the chicken breast. Heat on high until the stock starts to bubble, then lower the temperature and allow to simmer for 8-10 minutes (depending on the size of the breast).
Step 2: Slice the chicken, cucumber and tomato into thin strips.
Step 3: Remove some outer layers of the lettuce, trying not to tear them, then spread one teaspoon of hummus onto the inside of the lettuce leaf.
Step 4: Sprinkle a pinch of paprika, then add the chicken, cucumber and tomato strips. Fold the edge over and then roll the leaf just like a normal wrap.
Voila! Easy, healthy and delicious… Enjoy!
