Roasted Beetroot Hummus

If you have been following my recipes for a while at www.sophiebenbow.com you will know that hummus is something I make religiously every week. Store bought hummus will never compare and I urge you all to start implementing this easy, two-minute recipe into your weekly routine. 

Beetroot is just one of the many combinations you can make and if you’re not a fan of beetroot feel free to leave it out or try using some herbs such as coriander and parsley or roasted red pepper instead. I tend to cook my chickpeas but if you don’t have time you can use tinned chickpeas instead.

You will need:
240g cooked chickpeas
3 tbsp. tahini
1 tbsp. olive oil
Squeeze of half a lemon
Pinch of Paprika
1 tsp. ground cumin
1-2 cooked/roasted beetroot
½ cup of warm water
Salt and pepper
1 clove of garlic **optional
2 tbsp. pomegranate seeds **optional

Serves 6-8

Method:

  • Add all of the ingredients into a high-speed blender
  • Blend until desired consistency is reached.
  • Serve with crudités such as: radish, carrot, cucumber, celery or use on top of a salad.
  • Enjoy x x
