Roasted Beetroot Hummus
If you have been following my recipes for a while at www.sophiebenbow.com you will know that hummus is something I make religiously every week. Store bought hummus will never compare and I urge you all to start implementing this easy, two-minute recipe into your weekly routine.
Beetroot is just one of the many combinations you can make and if you’re not a fan of beetroot feel free to leave it out or try using some herbs such as coriander and parsley or roasted red pepper instead. I tend to cook my chickpeas but if you don’t have time you can use tinned chickpeas instead.
- Add all of the ingredients into a high-speed blender
- Blend until desired consistency is reached.
- Serve with crudités such as: radish, carrot, cucumber, celery or use on top of a salad.
