Thai inspired protein packed salad

Now that summer is on the horizon means we can take advantage of things like mangoes and fresh, zingy summer salads! This is a really easy thai inspired salad and you can use any kind of protein that suits you. If you are cooking a BBQ or family dinner this is the perfect opportunity to cook a bit extra and use it in the salad for the next day. I had half a fillet of cooked salmon available and some delicious cooked prawns! Perfect post-workout meal! YUM!!

You will need:

For the salad:
1 x carrot, spiralised or julienned
1 x zuchinni, spiralised or julienned
½ a bunch of mint, roughly chopped
½ a bunch of coriander roughly chopped
2-3 kaffir lime leaves, deveined and sliced finely
2 tbsp peanuts roughly chopped
½ a red chilli, roughly chopped
8-10 cherry tomatoes, halved
½ red onion, sliced finely
1/2 a mango, diced
For the dressing:
1 tsp fresh ginger, grated
1 tbsp fresh lime juice
2 tsp fish sauce
1 tsp sesame oil
1 tsp soy sauce
½ garlic clove, crushed
2 tsp coconut sugar
sprinkling of sesame seeds
For the cooked protein:
(any protein really!)

Serves 2


  • Prepare all of your salad ingredients. I like to chop the onion and place in some water to soak for a few minutes. Drain when ready to serve – it will just take away a lot of the overpowering ‘onion taste’ but it will still be yummy.
  • Place all of your dressing ingredients into a bowl. Whisk or stir.
  • Add your protein into the salad and mix well. Add your dressing and serve into bowls
  • Enjoy!


  • If you can get hold of some thai basil this also makes a great addition to the salad!
