Now that summer is on the horizon means we can take advantage of things like mangoes and fresh, zingy summer salads! This is a really easy thai inspired salad and you can use any kind of protein that suits you. If you are cooking a BBQ or family dinner this is the perfect opportunity to cook a bit extra and use it in the salad for the next day. I had half a fillet of cooked salmon available and some delicious cooked prawns! Perfect post-workout meal! YUM!!
You will need:
- Prepare all of your salad ingredients. I like to chop the onion and place in some water to soak for a few minutes. Drain when ready to serve – it will just take away a lot of the overpowering ‘onion taste’ but it will still be yummy.
- Place all of your dressing ingredients into a bowl. Whisk or stir.
- Add your protein into the salad and mix well. Add your dressing and serve into bowls
- If you can get hold of some thai basil this also makes a great addition to the salad!
