Vanilla Chia & Mango Protein Parfait

This yummy creation not only looks great, but tastes so incredible! It is made up of granola, coconut yogurt, fruit and vanilla chia layers. This is the perfect afternoon pick-me-up, or summer breakfast!



CHIA GEL (Prepared overnight)
1 cup water
4 tablespoons chia seeds

Greek Yogurt
1 mango, diced



  1. For the chia gel, create a protein shake by mixing the vanilla protein powder with water.
  2. In a container, stir the protein shake with the chia seeds until evenly distributed throughout the liquid.
  3. Place the chia mixture in the fridge to set overnight.
  4. The next morning, begin layering the chia gel, granola, mango and yogurt evenly.
  5. Enjoy!
